This PDO Livaort with raw milk is made with the milk of the 60 Normandy cows of the farm fed on green grass from the fields and farm fodder. Livarot is nicknamed the cheese of the colonel because it has strips of 5 strips (like the officer's stripes) on the sides, in order to maintain it during the maturing process. These strips are made by Pierre and Eric with reeds harvested in the surrounding area and dried on the farm.
With its beautiful slightly orange surface (here no colouring is used to get an orange colour), we found that this cheese had character with its warm milk and stable aromas. As it matures the taste of Livarot becomes more and more powerful.
