Salers PDO cheese is made with montbéliardes cow milk at the end of spring and in summer. The cheese is put to curdle in a container made with chestnut wood which gives it a particular taste. It’s a typical farmer cheese different from the Cantal cheese because it’s yellow inside. At 900 meters above sea level, the quality of the herbs and flowers that feed the cows gives this cheese made by Alain, a good local notoriety.
