Is it a pâté ? Is it a terrine ? Is it a sausage ? No, it’s a caillette. Caillette is an ardéchoise and drômoise speciality. We witnessed the shaping of the caillette and it’s really a team work. They remove the nerves of the meat by hands and it’s a lot of work and for Julien it’s what makes the difference. Caillette is a mix of pork meat with green vegetables (Swiss chard, spinach and seasoning). Then they shape balls of 200 g and wrap them with caul fat. A cooked ball with delicate vegetable flavours and the good texture of the meat. Porks are free-range and fed with cereals All the products have been tasted and approved by our team We advise you to eat it cold or hot (reheated in a pan or in the oven)
