Ossau-Iraty farmhouse PDO is a unique cheese. Made from raw sheep's milk, this Basque cheese was voted Best Cheese in the World in 2018. At Guillaume and Michel's, it is prepared just after the morning and evening milkings with ewes that have grazed in a 40 hectare area in the Aldudes valley. In the renovated sheepfold with its old stones and typical exposed woods, leaning against the counter, we tasted this farmhouse tome that has been matured for 4 to 6 months. We love its frank and dried fruit taste with a firm and grainy texture in the mouth. A real good mountain cheese where the smell of dried herbs and the atmosphere of the sheepfold are released even before tasting.
