This famous cheese from Aveyron is made in a traditional way by Delphine and her team. At the Maison Carles, we are the last to make Roquefort by hand. The cheese made from whole ewe's milk develops its blue-grey vein thanks to the penicillium roqueforti. This mushroom, essential in the making of Roquefort, grows in rye breads which are kept in the cellars of Maison Carles. Delphine is the last in the appellation to produce her own penicillium roqueforti. The House of Carles alone carries the tradition of a handmade Roquefort. It is thanks to these ancestral gestures that the original and unique taste of this cheese is preserved. The aromas of fresh herbs and local flowers are present.
