This Morbier AOP farmhouse PDO is made by Emmanuel and Pascale on their farm of about thirty cows in the Pays Saugeais.
They work with two kinds of yeast, one part with classic yeast and another part with "wild" yeast cultivated by them, which is very little used elsewhere in this type of production.
It is these natural leavens that give the identity of this Morbier and give it different tastes according to the seasons.
At the end of a meal or in case of a little hunger, we love it at all times.
