This St Timothée is a lightly pressed cheese matured for 60 days with a fine golden rind. During the ripening process it is washed with a locally brewed artisanal beer. It is called Milvus Brune or Amber Milvus. St Timothy's is the name of the Romanesque church overlooking the farm.
At an altitude of 900 m, the quality of the herbs and flowers that feed the cows gives Alain's cheese a well-established local reputation.
