Pignou bleu is a farmer small blue cheese made as Bleu d’Auvergne. But, it’s less creamy and its taste is less strong. Its texture is between Cantal cheese and Bleu d’Auvergne. Alain and his team wanted to make a small cheese, easier to preserve. At 900 meters above sea level, the quality of the herbs and flowers that feed the cows give this cheese made by Alain, a good local notoriety.
