This PDO Comté has a minimum of 24 months of maturing and can have much more. Indeed for Benjamin, our farmer, the taste does not vary much between 24 and 30 months in the cellar. At this stage, the cheese has floral aromas as well as roasted and grilled notes. A few grains come cracking under the teeth, this is called tyrosine (it's not salt), proof that the Comté has developed rather well.
Twenty-two farmers got together to start a small farmer’s cooperative and manage to exist facing huge industries.
All the products have been tasted and approved by our team.
We advise you to get the cheese out of the fridge one or two hours before eating.
